Professions are skills used to create and enhance items (gears). You will start with one skill once your character has learned a profession.
When you use the profession, your skill will increase. A profession’s higher skill will allow you to create more powerful items. If you change a primary profession, you will lose any skill you have made with your original profession. So it is important to choose your primary professions wisely.
As soon as your character hits level 5, it's time to pick up one, two or three profession! Each character you can take two primary professions choosing from herbalism, mining, skinning, alchemy, blacksmithing, enchanting, engineering, leatherworking, tailoring, jewelcrafting or inscription.
Primary Professions are typically divided two categories:
"Gathering" professions include Herbalism, Mining and Skinning, which allows you to collect materials.
"Crafting" professions include Alchemy, Blacksmithing, Enchanting, Engineering, Leather working, Tailoring, Jewel crafting and Inscription, which allows you to create items.
The secondary professions include cooking, fishing, first aid and archaeology.
When you want to choose the primary professions, it is better to choose two professions that work well together. It means that a crafting skill that uses you collect’s items with a gathering skill.
Herbalism is typically paired with alchemy or inscription;
Mining is typically paired with blacksmithing, jewelcrafting, or engineering;
Skinning is usually paired with leatherworking;
Enchanting and Tailoring can be paired with any profession.
As to secondary professions, since you're not limited on the number you can take, you can really grab as many as interest you are.

It harvests herbs from the ground, you can gather herbs from the plant-based monster. It's very useful at low levels and still provides a small boost at higher levels.
If you want to do Alchemy or Inscription, Herbalism is highly recommended, so you can pick your own herbs instead of buying them from the auction house.
There is no requirement, carrying the Herbalist's Spade in your inventory gives +10 to your herbalism skill. If you find your inventory swamped with herbs, there are bags specifically to carry herbs.
It allows you to mine for ore and gems, which are used for blacksmithing, engineering and jewelcrafting. In addition to being able to mine ore nodes, you'll encounter the occasional earth-based monster that you can mine for ore after death.
If you want to pick up blacksmithing, engineering, or jewelcrafting, mining is highly recommended as a companion profession.
Though you don't need any special tool to mine, carrying a Mining Pick in your bag will give you +10 to mining skill. If you carry lots of ore or gems, you may also want to invest in a mining bag.
It is used to skin enemy corpses and obtain leather.
It allows you to skin animals for leather, which is primarily used for latherworking.
Leather is most commonly used to create items with the Leatherworking profession, but it can also be used to create a few items for other professions including Tailoring and Engineering.
Unlike herbalism and mining, in which goods you're collecting are found in nodes scattered around the world, skinning requires you to kill an animal in order to skin it.
